Muffins

Makes 12 300 g self raising flour, sieved into a mixing bowl 2 teaspoons of baking powder 125 g soft brown sugar 2 large eggs pinch of salt 175 ml milk 50 g melted unsalted butter Put all ingredients into a mixing bowl and mix with a kitchen mixer for a few minutes till combined. For topping: frozen or fresh berries - can use blueberries, cherries, raspberries, etc. Use a big spoon to put roughly 1 big spoon of dough into a muffin basket. Top with choice of berries. Can also add a few cooking chocolate chips, for extra sweetness.
Bake in the oven for 30 min Gas Mark 5 180° C Serve sprinkled with icing sugar. Best eaten on the same day but last up to 3 days.
