Potato, Sausages and Leek Pie

Serves 4, preparation time 30 min, cooking time 30 min 1 pack of 8 sausages, whatever quality you can afford, sliced 4-5 potatoes, same amount you do for main meal, peeled and sliced 1 leek, sliced mushrooms - finely chopped 2 garlic cloves crushed 150 ml vegetable stock (e.g. Oxo) 150 ml Dry Cider or Apple juice Dry Mixed Herbs for seasoning 2 table spoons of cornflour 4 table spoons of water grated cheese salt and pepper Boil potatoes for 10 minutes in a pan of unsalted water. Drain and put aside. Fry in a deep pan sausages. Add leek, garlic, mixed herbs, vegetable stock, cider or apple juice. Blend cornflour with water and add to the pan. Bring to boil and stir until sauce thickens:
Transfer to oven-proof dish and cover with sliced potatoes, season with salt and pepper, cover with grated cheese:
Bake in the oven, uncovered, for 30 min at Gas Mark 5 / 190° C.
Serve with a choice of greens.
